White eggplant
This is a different version of the eggplant that can be found only in Santorini. Here the color of eggplant is white, has fewer spores, sweeter taste and more importantly does not absorb too much oil when frying. White eggplant can be tasted like salad (silky and smooth melted white eggplant) and in many dishes using eggplant where replaces the traditional black.
